| Vieille Prune |
|
Our “vieille prune” (meaning “old plum”) brandy is produced from a variety of plum which is renowned in Alsace, the Quetsche. This large blue oblong fruit has yellow flesh and ripens in late September or early October. It is picked by hand and placed in plastic tubs where fermentation takes place, and is mashed for the first 3 weeks after picking. After distillation, the spirit is matured in a feuillette (an oak barrel holding 114 litres) for 12 to 18 months, giving it its light brown colour.

Tasting : Thanks to being stored in oak barrels, the plum flavours are revived, and the drink is reputed for it mildness. “Veille prune” can be consumed as a digestif or with sorbets.
