A mirabelle is a small yellow plum, which ripens in September. Using a shaker attached to the back of a tracker, the tree is shaken from its trunk and only mature fruit falls. The mirabelles are placed in plastic tubs where fermentation takes place and mashed for the first 3 three weeks. After distillation, the spirit is matured in glass demijohns for around 6 months, then bottled

Tasting : After having been reduced to a low temperature (around 6° to 8°) the flavour of the spirit is strongly revived by the cold. Its bouquet is delicate and of great finesse. The taste of the mirabelle is long and intense in the mouth. The Mirabelle is consumed as a digestif and is also renowned for use in making sorbets.
