Our production of “eau de vie” spirits begins in spring, with work on our vines and orchards being undertaken with great care. Fruit is in fact the only ingredient used in French “eaux de vie” spirits, and this is what gives them their flavour. Strict selection is required during harvesting. Fermentation takes place in plastic tubs for several months, and distillation is carried out in a copper Charente pot still.

| Distillation: The ingredients are distilled once to obtain “imperfects”*. The second distillation takes place immediately afterwards and consists of redistilling the imperfects. At this stage, the distillation head* and tail* are removed, keeping only the 70 % middle cut, which will be reduced to 45 % by adding water. * imperfects: alcohol from the first distillation, which reaches around 25 %. * head: very strong and etherised alcohol. * tail: very thick and weak alcohol.
